Types of Salt
Himalayan Mountain Salt functions much like the popular kosher salt. Unlike common table salt, which sometimes contains traces of iodine, an artificially manufactured commercial byproduct otherwise called sodium chloride often contains just three ingredients: chlorine, sodium, and various other chemicals, such as bleaching to make the color white. Most natural Himalayan Mountain Salt, harvested from mountainsides in the foothills of the Himalayan Mountains, is totally pure. Himalayan Sea Salt and Himalayan Mountain Salt differ primarily in the way they are harvested. Sea salt is harvested by removing a layer of the ocean floor. After the layer has been removed, it is further processed, usually by adding some bicarbonate to increase the rate of chemical interaction with the water. Salt makers then add iodine, sulfur, and various other minerals. Most people recognize table salt as table salt. But sea salt and Himalayan mountain salt are two entirely different products.
Although they are both rock salt (a crystalline salt), there are significant differences between the way they are harvested and prepared. Sea salt is generally made from seawater, whereas Himalayan mountain salt is typically made from rock salts extracted from high in the mountains. The process that yields himalayan mountain salt is more delicate than the one that yields regular table salt. The rock salt is exposed to extremely high temperatures which, over time, tend to liberate most of the volatile compounds in the rock salt (including iodine, sulfur, and others) into the solution. It is then washed several times, removing all traces of the volatile components, before being packed into containers and shipped around the world.
Natural sea salt is collected from the ocean floor by divers. In the process, much of the material is dissolved into the water, giving a rainbow colored product that can be used for a variety of purposes, such as seasoning and baking. Himalayan salt, on the other hand, is mined by removing a layer of rock from the surface of the earth’s crust. Natural sea salt is processed somewhat differently: it is dehydrated and deodorized, then treated with iodine, sulfur, and many other elements to increase the concentration of the substance.
Pink salt, or Himalayan sea salt, is produced in the mines of Nepal and Pakistan. It was named after the mineral himalayan pink, which is a variation on the traditional name for this salt. The color of the salt is determined by the ratio of the magnesium and calcium contained in the rock salt. The heavier the magnesium content, the reddish hue of the salt will be. Himalayan sea salt comes in two grades: standard and fine grade.
Persian blue salt is also produced commercially. Produced in the region of Iran, it is known for its fine and precise grain structure. It is a pale grey in color, similar to Himalayan salt, yet it is far less expensive. Although it lacks the aesthetic appeal of Himalayan salt and is typically cheaper, it is also a safer product to use in food preparation, since it is often tested for contaminants before it is released into the market.
Indian Himalayan salt comes from the foothills of the snowcapped peaks that surround the town of Shimla in the Indian state of Himachal Pradesh. It has been used for centuries as a popular household spice and for making gourmet foods that are enjoyed all over the world.
